Wire an Edit-from-detail button

Right now the Detail screen drops the user straight into edit mode. More polished apps default to View mode (read-only) and require an explicit Edit tap.

Add an Edit button on DetailScreen that switches the form to Edit mode, and change the form's DefaultMode to FormMode.View.
