Parse categories

You now have 6,000 records in your data; however, many of those records have "Null" quantities that are irrelevant to your analysis. Much like packing a suitcase for travel, you only want to carry what you need when sending data through a workflow. Smaller data makes for faster processes! You also want to break apart the current Category column into separate Category and Sub-Category columns.
